Coca de Sant Joan

Neules                           

 

Ingredients:

-          50gr farina

-          3 clares d'ou

-          100grde sucre

-           una mica de sal

-          60gr de mantega per fondre

-          farina i mantega per les plates de forn.           

 

Batre les clares d'ou amb el sucre i la sal fins que estiguin a punt de neu. Després, sense parar de batre, afegir la farina i la mantega. Posar el batut , cullerada a cullerada, en les plates engreixades i enfarinades, deixant que cada cullerada s'estengui formant un oval molt prim, quasi transparent. A mesura que tinguem les plates plenes, fornejar a forn fort durant 6-8 minuts, fins que estiguin daurades. Treure les plates del forn i aixecar immediatament cada una de les neules amb una espŕtula de metall. Abans de que es refredin enrotllar-les en forma de cigarrets.

 

Suggeriments per servir-les: Crema Catalana, Sorbets, Ametlles i Moscatell, gelats, etc....

Ingredients:

  -          50 gr flour

-          3 egg yolks

-          100 gr sugar

-          a bit of salt

-          60 gr butter to melt

-          flour and butter for the trays

 

Whisk the egg yolks with the sugar and a bit of salt until stiff peaks form. Then, while you keep whisking, add the flour and butter. Once finished, pour the mixture, spoon by spoon, onto the trays, which you will have spread with butter and flour. Each spoon of mixture should make a very thin oval figure, almost transparent. Once the tray is full, put it into the oven for 6 to 8 minutes, until they get a golden colour. Remove the trays from the oven and with the help of a spatula pull them one by one. Before they get cold, role them up as if they were cigarettes.

 

Serving suggestions: Crema Catalana, Sorbets, almonds and sweet wine, ice cream, etc …
